Birdies Bistro sits on the edge of the RSPB’s Hayle nature reserve in Lelant and gives prime views over the estuary.

We have now opened our doors and are already welcoming regulars.

Dom has worked at a variety of high profile establishments that include Harrods, Raymond Blanc’s Le Manoir aux Quat’Saisons and Ferrari.

He also worked with the prestigious Salisbury group, who own gastro pubs in Buckinghamshire where he created British colonial food made with foraged ingredients and local seasonal produce.

Consequently, he is passionate about real food and is a keen supporter of the county’s smaller food producers.

He says: “Cornwall has a fantastic variety of local seasonal ingredients that are full of flavour. Our local suppliers, from dairy through to game, are excellent and it’s a joy to create menus using their produce.”

Dom continued, “It has long been a dream of ours to open our own restaurant and to find such a unique venue allowed the dream to come true.”
